Beer battered fried fish tacos
I love how tacos or quesadilla can make up dinner just in a moment using whatever that is in the fridge to fill in some tortillas. This time it was fish with a little asian touch:
Ingredients

White fish

Beer

Flour

Cilantro

Blair's green tea-wasabi sauce

Salad

Red cabagge

Napa cabagge

Sour cream

Lime juice

Mix in a bowl sour cream and lime juice. Then add both cabagges choped and rest aside.
Prepare fish batter: simply mix flour and beer.
Fried fish and put tacos together: some salad with fish on top of it and then some sauce and salsa.
Enjoy!

After Death pica. Pica mucho.

As I said some months ago, I always go to Yummyplanet when I need american food. First, I started to buy there for the products I miss from New York but then I started to discover some new products. One of them are Blair's Death hot sauces, which are suppossed to be the hottest in the world.
With the 4 bottles pack you get a pretty well sorted selection of miniatures (and that small size is something quite usefull once you learn how spicy they are)

The softest one is Jalapeño Death, made with jalapeños, tequila and tomatillos. I like to add it to breakfast burritos, filled with scrambled eggs and spinach.
Next one is Blair's original, with chilis, garlic, onion...I find it good with almost everything.

I've got to be honest. Before tasting them, I didn't think they were so hot, but without diluting them they can almost hurt. From this point, I always use it more as spice than a sauce.

After death is hot. It is REALLY hot. I like to add a little drop (my advise is to do it very slow, tasting after every drop) in a hot chocolate mug with some cinnamon.

Sudden death is the hottest one. It has honey and lime and maybe because of this hot-sweet-tangy mix I like to use them in South East Asian food, like Pad Thai or vietnamese summer rolls dipping sauce.

____________

I'm been trying to write here for a long time, but this past months finishing my degree have been totally hectic.
But I still had time for cooking, trying to optimize time as much as possible. And basics, specially those good after frozen them are the best solution for lots of meals, having a totally different dish just changing the seasoning.
One of this basics is creamy carrot soup.
Basic carrot soup
As simple as sauté carrot and onion and then boiling them with enought water to cover them. They may be roast in the oven (but them, onion should be roasted with the skin on). When is cooked, grind it and you get a thick orangee puree that can be perfectly frozen.

Carrot soup with orange and ginger
Add to one fraction of carrot puree, half a fraction of vegetable stock, half a fraction of orange juice and some ginger. This soup is great warm and also cold (very refreshing!)

Carrot puree with yogurt and tahine
One fraction of carrot puree+one fraction of vegetable stock+cumin. Garnish with yogurt and tahine.

Gingerbread Syrup

Water: 300ml

Sugar: the same volumen as water

8 allspice berries

1/2 ts of whole black pepper

1/2ts nutmeg

1/2 cinnamon stick

3 centimeters of ginger

Mandarine Zest

Just cook it in saucepan (medium heat) during 20 minutes. Cool for a while and put it a bottle.
For a Gingerbread latte, just like in Starbucks (but cheaper and healthier!), use one tablespoon of syrup, un cup of milk and half cup of strong espresso.

Ingredientes

Pasta, yo utilicé Amorelli

Leche

Harina

Queso Cheddar (no esa cosa naranja si no un buen queso cheddar inglés)

Brocoli

Bacon

Cebolla caramelizada

Migas de pan

sal, pimienta y nuez moscada

Brocoli Mac and Cheese
Mac and cheese are one of the most typical dishes from the States, part of the so called Comfort food (mum food, the one you cook when you're felling depressed) This recipe is inspired in my last NY lunch, that took place in Sarabeth's (Central Park south), where I went just after bursting in a Gossip Girl shooting (and I promisse I didn't know they were doing it). Creamy, flavourfull and one of the cheapest dishes in the menu...because Sarabeth's is great and a must to have brunch but it's not what I'll call cheap.

Queso cremoso

Cranberries and maple cream cheese spread
If there was something that I loved about having breakfast while working in the NY hospital they were bagels. I have lovely memories of fridays, the day we had general session and the chief used to bring breakfast for everyone, with some delicious bagels from a Madison Av. shop. I was totally amazed too about so many different cheese spreads you could fine in Delis: scalion, salmon, vegetables, cranberries... I bet you could have one different combination each day without repiting in a whole year.
Ingredients

cream cheese

cranberries (or if you have it, cranberry sauce)

maple syrup

mandarine zest

As easy as mixing every ingredient in a bowl and it's ready to spread in a toasted bagel (I used this recipe), a bread toast or for dipping some fruit sticks... It's up to you!

Never trowing away too ripe fruit
Crisis+ living alone+ having an exam in a couple of days means just 3 things:

Forgetting fruit in some kitchen corner and findding it almost rotten

Trying to save as much as possible time and money

Being creative

So when I found those bananas I had it clear very soon: banana cake. My favourite recipe is this one by Jamie Oliver but I didn't had so much butter at home (and I didn't wanted to used it either because is way too much) so I change a recipe a quite a bit.
Banana cake

2 too ripe bananas

1egg

50 grams of butter

4 tb of creme fraiche

300 g of flour

2 tb baking pownder

1 ts vanilla paste

Mix sugar, butter and bananas. Then add the rest of the ingredients. Cook in the oven: 175ºC during 35 minutes.
The result is a very moist cake (event with the fat reduction, because banana helps to keep the humidity).

I also had some avocados that I bought at 0.9 euros/kilo. I mean...I really had to buy them, even if they were so black in the outside it was such a bargain!). After a lot of guacamole and burritos I was done with savory avocado recipes for a while so...why not something sweet? And there it was: microwave chocolate and avocado little cakes (vegan, eggless, butterless)

3 tbs avocado

3 tbs soy milk

4 tbs flour

2 tbs sugar

1 tbs pure cocoa

1/4 ts baking pownder

So easy as mixing everything and cooking it in the microwave. I usually do it in small silicone pots (6.5x3.5x2.5 cms) during 30 seconds and then leave it cool for a while. Is a great treat to have in a coffee break or to complement breakfast. As it has no eggs in the batter you can keep it in the fridge and cook it just before eating it.

Hornear a 220º unos 15 minutos

---------------------------
During my time in New York I used to spend a lot of time in the hospital so anyday I didn'd had surgeries and was able to go out at noon I tried to get as much as I could from that 2 hours.
One day I went for a walk around the lower part of the Upper East Side. I remember that I made a reservation in Alice's Tea Cup and while I wait I bought (too much, as is to be expeted) in Khiel's. When I went out of the shop I had an inbox in my phone: my table was ready.

I chose a Birthday Tea teapot (and yes, my choice was about the name and not the actual tea flavour. It was good though) and a morebritishthantheQueen Cucumber and watercress sandwich.
While I was enjoying it I forgot all those genuine and noisy uppereassider children (and which is probably worse...their mothers).
Yesterday when I tasted what it came out of my oven I just missed the Cheshire cat smilling from the bathroom's mirror to feel like if I was in NY again.

Alice's Tea Cup Pumpkin Scones

1 1/2 cup of flour

3 tbs brown sugar

1/4 tsp salt

1/4 tsp baking soda

1 1/4 tsps baking ponder

2 tbs of cinnamon (Yes, I know it looks WAY too much)

2 tbs of ginger (I know...)

1 tbs of vanilla extract

85 g of butter

170ml buttermilk

1/2 cup of pumpkin puree (I used canned one. If you use it home-made be sure it's drained enough or the dought would be too soft)

Para el glaseado

25 gr of butter

1tbs brown sugar

a little bit of lemon juice

un pinch of salt

1 tbs cream

In a bowl mix the solid ingredients with the cubed butter

Add the liquids to the bowl and mix (just mix, do not

Put together in a silpad and cut. As my dought was too soft and stiky I just put it in little ---. 6, to be exact.

Bake (220ºC) for 15 minutes

While the scones are in the oven prepare the glaze: mix sugar, butter and lemon in a pan and heat until it boils into a caramel. Then add cream, mix and it's done

Leave the scones cold down and then glace them.

With these recipe you get dense moist and spiced scones that are good either cold or warmed (although I prefer them warmed a little bit)
You can even freze them, with or without glaze (just keep in mind that if you defrost them in the microwave the glaze goes into the dough)

I have to apologize about being MIA for so long. I just can say that I've been in India and in my parents home and didn't cook too much there.

Some days ago I saw in Spanish Public TV a TV show called "Spanish people around the world" It was dedicated to Philadelphia and I had a craving for a Philly Cheese steak Sandwich. I know, I know it's not much more than a beef steak sandwich with onions and peppers but well...

Beef steak, finelly sliced

Green bell peppers

Onion

Bread

Cheese (Cheez Whiz if you go traditional or provolone-mozzarella if you want)

In a pan, cook stripped onion and green pepper. Philly Cheesesteak Sandwiches are wet so don't let them get dry (use a little bit of white wine if you want to help)
Once the vegetables are ready, add the beef, previously cut in stripes.
And the next step is simple...just make the sandwich.

Arroz blanco (yo utilice basmati)

I love this dishes made with leftovers. A little bit of boiled rice, fish and four other things and we already have a complet meal. This british dish is usually eaten for breakfast, but in Spain it looks more like lunch. It has eastern flavours, and that's because its origin can be found in british colonial India (just like many other dishes we assume are indian and are not traditional at all)
Chicken over the rice please. With more salad than rice Ensalada, arroz, pollo y salsas en un envase de plástico.

Chicken over the rice #diadeltuper
I could say it in Spanish but in my mind, it would be always in English, I just cannot think about it in a different way.
The hospital where I made my rotation in New York had a good canteen. They had a choice of meals and it was not bad, but every time I had some time I prefered to go out.
Just in front of the door there was everyday a kebab/ chicken over the rice truck. Real (And I mean REAL chicken tights off the bone) marinated with arabic spices grilled.
Chicken over the riced pleas. With more salad than rice. Salad, rice, chicken and sauces to go.
The owner actually knew me the last days... but even been like that, he did'nt mind it when I said that "Yes, I'll like both white and hot sauce but just a little bit of hot, please). My mouth was always on fire.

There are too many Chicken over the rice halal trucks in New York (They say that the best is the one in the Hilton Hotel corner) but I remember this one with love.

As long as today is Tupper day and this is a pretty easy meal to carry on a tupper I found it very suitable for the ocasion. It can be eaten with the chicken just cooked but it is wonderful even cold, as a salad.
Ingredients

Lettuce

Tomato

Onion

Rice

Chicken

Baharat (or any arabic spices of your choice)

Sauce: yogurt, olive oil, lemon, garlic a little bit of mayonnaise.

Hot sauce

The chicken must be marinated for a couple of hours. Then, it's so easy as grilling it, putting some salad (letuce, onion and tomato) over rice and adding the sauce (made just mixing the ingredients). I splashed it with a very hot sauce and add a lonely samosa I had around.

Pad Thai
When I arrived home from Cordoba, I had no fresh goodies at home (I like to buy them in the small shops in my neighborhood). So I went to the groceries to buy a few things just after the library (and with a little bit of time, because I had to come back later to study). They had some kind of new prepared noodles to be cooked in 10 minutes. I spend even less time.

Ingredients

Rice noodles

Mungo sprouts

onion

Protein (I used tofu this time, but I usually do it with prawns or chicken)

Sauce: tamarind, fish sauce, brown sugar

Put the rice noodles in boiling water during 1 minute. Use that time to cut the onion and tofu.
Mix the sauce ingridients: fish sauce, chili, brown sugar and tamarind paste (you can also use lemon juice if you don't have tamarind. The idea is to have the typical thai flavours: sweet, sour, salty and spicy)
In a wook, put some sesame or peanut oil and stir-fry the sprouts and tofu. Add noodles and then the sauce. Stir for a little time, until everthing is mixed.
Garnish with coriander, cashew nuts and lime.

¿Qué me pareció?
I actually didn't have too much time (It's always the same when I go there for a meeting) but at least I could have a walk by the Jewish Square and eat local food.

I had already heard in a TV program about Bar Santos, wich is pretty close to the Cathedral-Mosque, and about their enormous Spanish Omelette that have been awarded several times.
So there we went and as you can see in the picture (click to expand) it was really really big. Bar Santos is quite an small place, so the thing to do is having your drink outside, just by the mosque wall, just as we did.
What did I think? Well... that omelette wasn't bad at all, but I wouldn't say it was one of the best I have ever tried (the first places in that ranking are my mother's and the one I usually eat in the bar wich is opposite to my Med School) Maybe it was because it is not so soft egg-running as I like them...It's fair to say that just to see that enormous omelettes it's worth to go.

Chana masala

When I moved for College, my mum started to make lunch-boxes for me with that meals that take quite a long time to prepare. So if she cooks lentils, beans or a good Spanish chickpea stew, she leaves a little bit for me in the freezer. But, who eats chickpeas just boiled, right from the cocido? I like them indian style...
Ingredients

Cooked chickpeas (or canned ones)

Diced tomato

Onion

Garlic

Garam Masala

Chili

Amchur (dried mango powder)

Coriander leaves

Cook the onion with a delicate flavour vegetable oil (or ghee) until it's tender but not golden. Add spices (garlic, chili and garam masala) and toast them being careful they don't get burned. Add the diced tomate and cook medium heat during 5 minutes. Add then the chickpeas, cook for other 5 minutes and finally ad half a tablespoon of amchur for portion (if you can't find dried mango powder you can use lemon juice)

And there you have them, with a mango Lassi for some freshness (or a mango and yoghurt milkshake) and a naan bread (you can also eat it with some basmati rice)

Y a comer bien.

I've heard about Musashi restaurant for a long time saying that is an authentic japanese restaurant and one of the first ones opened in Madrid... but when I asked Gastromaniac girls for advice and they recomended it to me I had no doub.
Musashi is not a fancy restaurant with desing furniture: you go to Musashi to eat. And to eat well.
But that's not a secret so it's convinient to make a reservation because it is usually full, even more for lunch time because they have some sort of daily menu including appetizer, miso soup, salad an entree of your choice (teriyaki, makis, mixed sushi or sashimi). I think it was about 8-12 euros.

We had soon our appetizers (prickled green beans) and two Asahi beers.
To start, we chose takoyaki (some sort of octopus doughnut) and miso soup.
Then, we had Chicken-don (teriyaki chicken over rice), gyozas (delicious), and a masago maki (salmon, avocado and masago sushi roll). We also had tuna niguiri and a toro-scalion maki roll but I totally forgot to picture them. That's a pity because it was actually the reddest and tastiest tuna I have ever had in my life.

Chicken-don, gyozas and masago Roll

Even if it looks like we were already full, we still have some place for deserts. In Musashi they do have a pretty traditional japanese desert selection (mochi, Yokan...) We had matcha truffles and green tea pudding, which was incredible refreshing and light.

Green tea puding and matcha truffles

It cost 26 euros each one (including sushi, takoyaki, gyozas, chicken don, two deserts and two beers). It may look expensive but we ordered too much food (it was a Birthday!), you can eat for much less money as you can see in their menu showed in their website.
Ingredientes

Hojas de arroz (2)

Papaya

Tallos de cebolleta

Brotes de brócoli

4 langostinos

Salsa

Zumo de lima

Salsa de pescado

Salsa picante

Round rice paper

Papaya

Scallion

Brocoli sprouts

4 prawns

Sauce

Lime juice

Fish sauce

Hot sauce

brown sugar

The first step is preparing the filling: cutting vegetables in stripes.
Fill a pan with hot water (not boiling, hot tap water will be enough) and put one rice paper in it. Leave until it's soft.
Place the wet rice paper on a teatowel. Be careful, it's very sticky and it tends to break.
On the rice papel put 2 prawns for roll (they should be the first so you will see them once the roll is rolled) scallion and papaya stripes and brocoli sprouts.
Then, roll as appears in the picture:

_______________

I've been fasting last days (A virus I suppose...Isn't it always a virus?) so now I have to eat gradually and soft things.
With just what I had in my fridge, because that virus didn't allow me to go to the grocceries either, I got a pretty good dish and not mushy at all.
Ingredient

Spaguetti

Raft tomato

Zucchini

Basil

Olive oil

cheese (I used goat cheese with honey)

How to
You just have to sauté the zucchini while pasta is cooking. Later add pasta (with a little bit of its cooking water) to the pan and then cubed tomato and basil. Mix and cook for a minute. Serve garnished with basil leaves, cheese and olive oil.

Me gusta mucho.
